High Protein Snickers Baked Oatmeal

This High-Protein Snickers Baked Oatmeal is the perfect way to start your day with a balance of healthy fats, fiber, and protein. Whether you're meal prepping for the week or making a batch for a cozy weekend breakfast, this recipe is sure to satisfy your sweet cravings while keeping you full and energized.

Ingredients:

1 cup ripe bananas, mashed (about 230g, 2-3 bananas apple sauce)

½ cup peanut butter (120g)

2 eggs (100g)

2 tbsp maple syrup (30g)

1 1/2 cup milk, high protein (360g) (I used both soy milk & cashew milk)

1⅓ cup sprouted rolled oats (133g)

1/3 cup ground flaxseed (40g)

1/3 cup hemp seeds (45g)

½ tsp cinnamon

¼ tsp salt

2 tsp vanilla extract

4 servings collagen powder (varies by brand, 40-50g total)

½ cup peanuts (65g)

1/3 cup chocolate chips (60g)

2 tbsp chocolate chips (20g)

Chocolate Drizzle Topping (OPTIONAL):

2 tbsp salted peanuts (16g)

1 tbsp peanut butter (16g)

2 tbsp chocolate chips (20g)

Instructions:

  1. Preheat the oven to 350 °F (180 °C). Slightly grease a 9-inch x 9-inch baking pan.

  2. Peel the bananas, place them in a medium sized bowl and mash with a form until a smooth puree form.

  3. Add eggs, milk, peanut butter, maple syrup, cinnamon, salt and vanilla. Whisk until evenly combined.

  4. Add oats, flax and hemp seeds. Mix until combined. Mix in peanuts and chocolate chips.

  5. Pour into your baking dish, add two tbsp of chocolate chips on top (optional)

  6. Bake the oatmeal for 20-30 minutes until set but still moist in the center. You can bake it longer if you prefer a dryer oatmeal texture, it's up to you.

  7. Let it cool down in the pan for 20 minutes

  8. For drizzle, melt the chocolate chips and peanut butter until smooth. Drizzle it over the baked oatmeal and sprinkle some salted peanuts. Enjoy this alone or with your favorite yogurt.
