Almond Butter Blondies

Indulge in the richest and most decadent almond butter blondies you've ever tasted! These indulgent treats are packed with creamy almond butter, dark chocolate, and a hint of sea salt. With a chewy texture and a sweet, buttery flavor, these blondies are sure to satisfy your sweet tooth.

Ingredients:

1 cup creamy, drippy natural almond butter (just roasted almonds)

2 eggs

½ cup coconut sugar

¼ cup pure maple syrup

1 tbsp melted butter or coconut oil

2 tsp vanilla extract

3 tbsp almond flour (or 1 tbsp coconut flour)

½ tsp baking soda

½ tsp cinnamon

¼ tsp salt

½ cup semi-sweet or dark chocolate chips, plus 2 tablespoons for sprinkling on top (optional)

Flakey sea salt, for sprinkling on top

Instructions: 

  1. Preheat oven to 350 degrees F. Grease and line a 8x8 inch baking pan with parchment paper.

  2. In a large bowl, whisk together the almond butter, eggs, coconut sugar, maple syrup, melted butter and vanilla extract until smooth. 

  3. Fold in the almond flour, cinnamon, baking soda, salt and ½ cup chocolate chips. Add batter to prepared pan and spread evenly towards the edges. Sprinkle 2 tablespoons chocolate chips on top (optional)

  4. Bake for 20-25 minutes or until tester comes out somewhat clean. Once they are out of the oven, sprinkle with flakey sea salt.  Allow bars to cool for 15-20 minutes before cutting into 16 squares.
