These rich, fudgy brownies are not only gluten-free but also packed with protein, fiber, and healthy fats, making them a wholesome alternative to traditional brownies. Made with naturally sweet dates, rich cocoa, and a few simple pantry ingredients, this recipe is perfect for satisfying your sweet tooth guilt-free.
Ingredients:
1 cup dates, pitted and soaked in hot water for 10 minutes
1/4 cup almond butter (or any nut or seed butter)
2 large eggs (2 flax eggs should work here, I have not tried it though)
1/4 cup Greek yogurt (or cottage cheese or vegan yogurt)
1 tsp vanilla extract
1/2 tsp baking powder
1/2 tsp salt
1/2 cup almond flour
1/2 cup oat flour
1/4 cup cocoa powder
1/4 tsp cinnamon (optional)
1/3 cup dark chocolate chips (optional)
1/4 cup chopped nuts (e.g., walnuts or almonds) this is optional
Directions:
Preheat the oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper or lightly grease it.
Place your pitted dates in a measuring cup or bowl and cover them with boiling water and let them steep in the water for 10 min.
Reserve 2 tbsp of the date water before draining the soaked dates and blend them in a food processor until smooth along with the reserved water. Blend for 2-3 min.
In a large bowl, combine the date paste, eggs, Greek yogurt, almond butter, and vanilla extract. Mix until smooth.
Add your salt, baking powder and cinnamon. Mix well.
Next add the almond flour, oat flour and cacoa powder. Mix until combined. Then add your chocolate chips.
Bake: Pour the batter into the prepared baking pan and spread it evenly. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
Sprinkle with flaky sea salt.
Cool and enjoy: Allow the brownies to cool in the pan before cutting them into 16 squares.
Storing Date Brownies:
Room temperature for 3-4 days, or in the fridge for up to 7 days. Store in freezer up to 3 months.
