Healthy Blender Banana Oatmeal Pancakes

Gluten-free, Dairy free, No Sugar Added & DELICIOUS!!

I love this recipe for a few reasons. First, you can throw all the ingredients in a blender, blend for 15 seconds on high and you have a healthy nutritious pancake batter.  Second, they are gluten-free, dairy free and NO added sugar. Third, you can make big batches and refrigerate or freeze the pancakes. Lastly, your kids will LOVE THEM!

Healthy Banana Oatmeal Pancakes

Nutritious & Delicious!

Ingredients:

    • 2 medium ripe bananas (you want these to be very ripe)

    • 2 eggs

    • 1/2 cup unsweetened almond milk

    • 2 tsp vanilla extract

    • 1 ½ cups old fashioned rolled oats, gluten free if desired

    • 1 tbsp flax meal (optional)

    • 2 teaspoons baking powder

    • ½ teaspoon ground cinnamon

    • ¼ teaspoon salt

    • Light Olive oil or Coconut Oil, for cooking

      Directions:

  1. Add all of the ingredients to a blender and blend on high until completely smooth, about 15-30 seconds. Let the batter sit in your blender while you heat your pan up.

  2. Lightly coat a griddle or non-stick frying pan with cooking oil of choice and place over medium heat. Once pan is hot, add 1/3 cup of the batter to the griddle for each pancake and cook for 2-4 minutes until pancakes slightly puff up and you see a few bubbles along the edges. If you want to make mini pancakes, add 1 or 2 tbsp of batter instead of the 1/3 cup.

  3. After the first batch of pancakes are done, I decrease to medium low heat so that my pancakes don't burn. Wipe skillet clean and repeat with more oil and remaining batter. Makes 9 pancakes total or 15 or so mini pancakes!

    Freeze:

    • To Freeze Pancakes: Flash freeze the pancakes on a baking sheet so they aren’t touching and place them in the freezer for 30 minutes. You can now place them in freezer bags or containers and freeze them for up to 3 months. Once ready to reheat, simply add pancakes to a plate and microwave for 30-60 seconds or until warm. Or re-heat in toaster oven at 350 degrees F for 5 min.

    • Perfect with Peanut Butter, a little maple syrup & toasted walnuts or pecans
