Ingredients:

2 cup almond flour ( toasted, optional)

1/2 cup raw cane sugar (or keto friendly sweetener)

1/2 cup butter, melted and cooled slightly (I browned the butter, this is optional)

2 eggs, room temperature

1 tsp baking powder

2 tsp vanilla extract

1/2 tsp salt

Cinnamon Swirl:

3 tbsp coconut sugar (or keto friendly brown sweetener)

1 tsp cinnamon

Instructions: 

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper and spread your almond flour out in an even layer. Bake for 8 min until golden, let it cool completely.

  2. Line a 8x8inch baking pan with parchment allowing extra to come up the sides. Make cinnamon swirl, add ingredients to bowl and mix, set aside.

  3. In a medium bowl, whisk together melted butter, sugar, eggs, and vanilla until fully combined. Then add baking powder and salt. Mix well.

  4. Stir in almond flour until just combined (try not to over stir)

  5. Pour half the batter into pan, spread in even layer. Sprinkle 2 tbsp of the cinnamon sugar mix evenly across the batter. Next, add the remaining batter on top. Carefully try to spread that out as much as possible, then sprinkle the remaining cinnamon mix.

  6. Using a butter knife, swirl the sugar into the batter.

  7. Bake for 22-25 minutes. The top will just be starting to turn a very light brown. Allow to cool completely and then dig in!

  8. Store 1-3 Days at room Temperature: Store the blondies in an airtight container lined with parchment paper to prevent sticking. Keep them in a cool, dry place. Or up to 1 Week in the fridge or up to 3 Months in the freezer
