Ingredients:

3/4 cup cottage cheese

2 eggs or 3 egg whites

1 tsp vanilla extract

½ cup unsweetened cocoa powder

1 tsp instant espresso or coffee (optional)

½ cup raw cane sugar or granulated monk fruit erythritol blend

3/4 cup almond flour, toasted (or oat flour, no need to toast)

1 tsp baking powder

½ tsp salt

¼ cup chocolate chips  melted and cooled slightly (or sugar-free chocolate chips plus 2 tbsp chocolate chips, sprinkle on top before baking (optional)

1/4 cup of walnuts or pecans (optional)

Instructions: 

Preheat oven to 350 degrees F and line an 8×8 baking dish with parchment paper.

Toast your almond flour on a baking sheet with parchment for 7-8 min until lightly golden, then let it cool completely.

Melt your chocolate using a double boiler or microwave, then add your instant espresso and mix until combined. Set aside.

In a food processor or high-speed blender, combine eggs, cottage cheese, and vanilla until smooth. Pour in cooled melted chocolate and blend again until combined.

Whisk together flour, baking powder, sweetener, and cocoa in a medium mixing bowl. Pour cottage cheese mixture into dry ingredients and stir until just combined.

Pour batter into the prepared baking dish and bake for 20-25 minutes (or until a knife comes out cleanly from the center of the pan. Let the pan cool completely on a wire rack before slicing into 12 brownies.
