These Healthy Chocolate Chip Banana Bread Bars are a must-try for anyone looking for a quick, nutritious, and allergy-friendly snack. They’re proof that egg-free, dairy-free baking can be just as delicious and satisfying.
Ingredients:
1 1/2 cups (430g) mashed ripe banana (about 4-5 bananas)
3/4 cup (195g) natural peanut butter (any nut butter or seed butter)
1/4 cup (85g) pure maple syrup or honey (any sweetener)
2 tsp vanilla extract
1 cup (96g) almond flour
1/2 cup (48g) oat flour
1/2 tsp salt
½-1 tsp cinnamon
1 cup (170g) dark chocolate chips (or use sugar-free dairy free plus more for sprinkling on top, optional)
3 tbsp finely chopped pecans or walnuts (optional)
Instructions:
Preheat the oven to 350F and grease and line an 8×8 square baking dish with parchment paper.
In a mixing bowl, stir together the bananas, nut butter, maple syrup, cinnamon and vanilla.
Once smooth, mix in the oat flour, almond flour and salt. Add your chocolate chips.
Spread the batter in the pan and top with a sprinkle of extra chocolate chips and chopped nuts (if using).
Bake for 25-30 minutes. You know it’s ready when the center feels soft but bounces back when touched.
Chill the bars for about an hour, then slice and serve. Enjoy!
Notes:
NUT BUTTER – You can also use any nut or seed butter you like. I personally think natural sunflower seed butter tastes really good in these bars! Whatever you use, just make sure it’s natural without any added ingredients.
GLUTEN-FREE FLOUR – Use 1.5 cups of oat and almond flour total. Use more or less of either, as long as you have 1.5 cups worth.
CHOCOLATE CHIPS – You can stevia-sweetened chocolate chips that are also vegan. Alternatively, you can use 100% cacao chips or any dairy free chocolate chip you prefer.
STORAGE – Keep these bars in an air tight container in the refrigerator and they will keep for up to 5 days.
