ALMOND LEMON LOAF

Ingredients:

  • 1 cup all-purpose flour

  • ½ cup almond flour (or substitute with another ½ cup all-purpose flour)

  • 2 teaspoons baking powder

  • Pinch of salt

  • 3/4 cup sugar

  • Grated zest of 1 lemon

  • ½ cup plain Greek yogurt

  • 3 large eggs

  • ½ teaspoon pure vanilla extract

  • ½ cup flavorless oil (such as light olive oil, canola or safflower)

  • ½ cup orange or lemon marmalade, strained, for optional glazing

  • 1 teaspoon water, for optional glazing

Instructions: 

1.    Preheat and Prepare: Preheat your oven to 350 degrees Fahrenheit and generously butter an 8½-x-4½-inch loaf pan. In a bowl, whisk together the all-purpose flour, almond flour, baking powder, and salt.

2.    Zest and Blend: Combine the sugar and lemon zest, rubbing them together to release their aromatic essence. Add yogurt, eggs, and vanilla extract, whisking until well blended. Gradually incorporate the dry ingredients, once almost fully incorporated, fold in your oil, resulting in a thick, smooth batter with a heavenly fragrance.

3.    Transfer the batter into the prepared loaf pan, smoothing the top with a spatula. Place the pan in the preheated oven and bake for 40 to 50 minutes (for a loaf), or 35 to 40 minutes (for a round cake) or until the cake pulls away from the sides and turns golden brown. Test for doneness by inserting a knife into the center – it should come out clean. Once baked, transfer the pan to a rack and cool for 5 minutes before unmolding and allowing the loaf to cool to room temperature.

5.    For an added touch of sweetness, prepare the glaze by heating the marmalade with water until liquefied. Using a pastry brush, gently coat the cooled loaf with the glaze for a glossy finish.

6.    Tip: Storing and Serving

This Almond Lemon Loaf is best enjoyed fresh but can be stored at room temperature for up to 4 days when wrapped well. For longer storage, freeze the unglazed loaf for up to 2 months. However, if you've glazed the loaf, it's best not to freeze it.
