This effortless recipe combines healthful quinoa and chia seeds into delectable chocolate bites that require no baking. The delightful treats, held together by any nut or seed butter and sweetened with pure maple syrup, are enhanced with a hint of cinnamon, vanilla, and sea salt for added flavor. These little bites of chocolate heaven are incredibly fudgy and rich, high in protein & satisfying with just one serving.

No-Bake Fudgy Quinoa-Chia Bites
This one-bowl recipe caters to various dietary preferences as it is gluten-free, nut-free, soy-free, oil-free, butter-free, and vegan. Preparation takes less than five minutes, and after assembling the ingredients, the bites simply need to set in the freezer. While I typically leave them overnight, a three-hour freeze is sufficient for them to solidify. Enjoy these frozen fudgy bites straight from the freezer, making them perfect for warmer months when avoiding oven use. This hassle-free recipe minimizes mess, providing a satisfying outcome with minimal effort.
To whip up these No-Bake Fudgy Quinoa-Chia Bites, gather the following ingredients:
1. Cooked Quinoa
2. Chia seeds ( I prefer to grind mine for better digestion)
3. Any nut or seed butter, I used Almond Butter (almond butter, cashew butter, sunflower seed butter, etc.)
4. Unsweetened cocoa powder (or cacao powder)
5. Cinnamon
6. Maple syrup
7. Vanilla
8. A pinch of salt
Simply mix these ingredients, form tiny balls or cups, and place them in our SiLLibake silicone baking cups or on parchment paper. Freeze for a couple of hours, and voila! The only pre-cooking requirement is the quinoa, which I usually have on hand from my weekly meal prep.
Using unsweetened cocoa powder in this recipe brings additional health benefits. Created by roasting and grinding cocoa beans, this ingredient is rich in flavanols, antioxidants found in cocoa solids. Indulge in the delightful simplicity of these effortless No-Bake Fudgy Quinoa-Chia Bites—a heavenly chocolate treat. Naturally sweetened and brimming with wholesome elements such as quinoa, chia seeds, cacao powder, and your choice of nut or seed butter, these bites are a perfect blend of fudgy goodness. Not only do they cater to various dietary preferences, being soy-free, gluten-free, vegan, dairy-free, and refined sugar-free, but they also offer a peanut-free option for those with nut sensitivities.
· 1 cup cooked white quinoa
· ¼ cup unsweetened cacao powder
· ¼ cup pure maple syrup
· ¼ cup any unsalted nut or seed butter (sunflower, cashew, almond etc.)
· 1 tablespoon chia seeds (ground or whole)
· ¼ teaspoon pure vanilla extract
· ½ teaspoon of cinnamon
· pinch of fine grain salt
Directions:
1. Line a small baking sheet or any flat surface with SiLLibake silicone baking cups, wax or parchment paper.
2. Add all ingredients to a medium sized mixing bowls. Stir well to combine.
3. Use a 1.5 tbsp retractable scoop to create bite-sized spoonful’s and place into your SiLLibake silicone baking cups or the lined baking sheet (9-10 total). Place baking sheet on a flat surface in the freezer and allow to set for 3 hours until bites are fully hardened. I usually leave overnight and enjoy the next day.
4. Enjoy straight out of the freezer. The fudgy bites will start to soften at room temperature after about 7-10 minutes. I typically take them out one at a time and enjoy immediately.
