Tomato Basil Cottage Cheese Egg Bites
Ingredients:
18 cherry tomatoes, halved (1 ½ tomatoes per egg bite)
3 medium garlic cloves, finely chopped
2 tbsp olive oil
1/2 cup fresh basil, chopped or torn
8 large eggs
2/3 cup cottage cheese (I used lactose free 2% fat)
1/3 cup Parmesan cheese
1/2 tsp salt
1/4 tsp pepper
Chili flakes or chili oil is optional (add when cooking your zucchini & onion)
Directions:
1. In a sauté pan, add 2 tbsp olive oil and 3 cloves of chopped garlic. Cook on medium heat until there is a little colour, then add your cherry tomatoes. Season with a little salt & pepper (as much as you like). Cook for two min, then set aside.
2. Preheat your oven to 350F, line your muffin tin with silicone liners or grease each cavity with olive oil.
3. Add 3 tomato halves with a little garlic and oil to each muffin liner, then evenly distribute the basil to each muffin liner. Set aside.
4. In a blender, add your eggs, cottage cheese, parmesan cheese, salt & pepper. Blend on high for 1 min or so.
5. Pour the egg mixture into each muffin liner ¾ of the way.
6. Bake for 20-22 min until they are set.
7. Eat hot or warm or cool and refrigerate for up to 4 days. Or freeze for up to two months.
