Savory Cottage Cheese Muffins

These Savory Cottage Cheese Muffins are high in protein, perfect for meal prep, and packed with vegetables!

These Savory Cottage Cheese are:

  1. High protein: I am a big fan of prioritizing a high-protein breakfast, and this recipe has three excellent sources: cottage cheese, eggs, and ground meat or sausage. Each muffin packs 16g of protein to kickstart your day.

  2. Meal prep friendly: Muffins are fantastic for batch prepping and freeze beautifully for future meals.

  3. Lots of veggies: Looking to incorporate more vegetables into your breakfast? These muffins contain 3 cups of veggies, and you can even use frozen ones to save on prep time.

Ingredients in these Savory Cottage Cheese Muffins:

Ground Meat or Sausage. I love to use ground meat like ground chicken or turkey for these muffins. I love to use seasoning that mimics Italian sausage, but you can season it how you like.  You can substitute it with breakfast sausage or whatever sausage you love (ensure you remove it from it’s casing).

Eggs. For extra protein and to help bind everything together. Please note I have not tested this recipe using just egg whites. I do prefer to use egg yolks in recipes, the yolks of eggs are a great source of omega 3 healthy fats.

Milk. Any milk of choice will work in this recipe. I recommend cows milk or soy milk for a high protein option

Cottage cheese. Any fat percentage will work. I usually opt for a lower fat option such as 0% or 2% lactose-free. If you only have blended cottage cheese, that will work!  If you aren’t a fan of the texture- no worries. The cottage cheese curds will melt once baked so you won't even notice them.

Olive oil. For a little moisture and healthy fats. Any neutral oil or even butter will work.

Maple syrup. This adds a little touch of sweetness to balance our strong salty flavors.

Oat Flour. I chose oat flour for these savory muffins. All purpose flour, whole wheat flour or gluten-free flour will also work.

Baking powder. This allows our muffins to be tall and fluffy.

Chopped vegetables. Use any vegetables you have on hand, fresh or frozen. Just be sure to chop them up finely first (and defrost them if frozen)! I did a combination of broccoli, cauliflower, carrots, green beans & spinach.

Cheese. A savory muffin is not complete without a cheese! I love adding Parmesan for that sharpness and cheddar for the gooeyness. You can use whatever cheese you love.

RECIPE:

Savory Cottage Cheese Muffins

These Savory Cottage Cheese Muffins offer a savory breakfast option that's easy to prepare, high in protein, and loaded with vegetables. With just 15 minutes of prep time, you'll have a nutritious meal ready in no time!

Ingredients:

1 lb ground chicken (or turkey, or breakfast sausage, or any sausage you love, with casing removed)

2 tsp garlic powder

1 tsp onion powder

1 tsp ground fennel seeds, toasted

1 tsp salt

½ tsp pepper

¼ tsp crushed pepper flakes

4 eggs

¼ cup milk (soy or dairy)

1 cup 2% cottage cheese (I used lactose-free)

1 tablespoon olive oil

1 tablespoon maple syrup

1.5 cups oat flour (or almond flour, you can substitute with AP or whole wheat, use 1 1/4 cup)

2 teaspoon baking powder

½ teaspoon salt

3 cups chopped vegetables broccoli, spinach etc.

1/2 parmesan cheese grated

1/2 cup cheddar cheese shredded

Directions:

  1. Preheat your oven to 400F. You will need two, 12 muffin tray (bake 6 muffins on each tray). If you only have one 12 muffin tray, that’s ok too!  Use silicone liners if you have them or ensure your metal pans are well greased.

  2. Cook ground meat on medium heat with spices for about 5-7 min until it is just cooked through, add your chopped veggies at the last minute just to warm them through and coat them with spices. 

    IF USING SAUSAGE MEAT: Remove the sausages from the casing and cook on medium heat until browned and no longer pink in colour, then add your chopped veggies.

  3. To a large mixing bowl, whisk together eggs, milk, cottage cheese, olive oil and maple syrup. Then add your baking powder and salt. Mix well.

  4. To the same bowl, add all oat flour. Mix well using a wooden spoon or silicone spatula.

  5. Add your cooked meat, chopped vegetables, & cheese.

  6. Divide batter evenly between 12 muffin cavities (6 muffins on each tray) about 4 heaping tablespoon (one heaping ¼ cup) of batter per muffin. Top with additional cheese(optional) and bake for 23-27 minutes.
