Roasted Pepper and Goat Cheese Cottage Cheese Egg Bites
These Roasted Pepper & Goat Cheese Cottage Cheese Egg Bites are the ultimate healthy breakfast or snack option. Whether you’re meal prepping for the week or need a quick, nutritious bite, this recipe is sure to become a favorite.
Ingredients:
8 eggs
1 cup diced, roasted red peppers (180g) (I used jarred peppers)
2/3 cup cottage cheese (160g) (I used lactose free 2% fat)
¼ cup Goat cheese (60g) (you can substitute with feta)
1/3 cup, (30g) Parmesan cheese
1/3 cup parsley (15-20g)
½ tsp garlic powder
1/2 tsp salt
1/4 tsp pepper
Directions:
Preheat your oven to 350F (180C), line your muffin tin with silicone liners or grease each cavity with olive oil. Evenly distribute the peppers, goat cheese & parsley to each muffin liner. Set aside.
In a blender, add your eggs, cottage cheese, parmesan cheese, garlic powder, salt & pepper. Blend on high for 1 min or so.
Pour the egg mixture into each muffin liner ¾ of the way.
Bake for 20-22 min until they are set.
Eat hot or warm or cool and refrigerate for up to 4 days. Or freeze for up to two months.
