Ingredients:      

5 large eggs

5 tablespoons unsalted butter, melted (or refined coconut oil, melted or olive oil)

¼ teaspoon kosher salt

1 ½ cups almond flour (not almond meal)

¼ cup ground flaxseed

2 teaspoons baking soda

1 tablespoon hemp seeds for topping (optional or sunflower, pumpkin or sesame seeds)

Directions:

  1. Preheat & Prepare the Pan
    Preheat your oven to 350°F (175°C). Grease an 8-inch loaf pan (9 inch pan is too big) and, for easy removal, line it with parchment paper.

  2. Optional: Toast the Almond Flour
    To add depth of flavor, spread the almond flour on a parchment-lined baking sheet and toast it at 350°F for 12-14 minutes until lightly golden, stirring occasionally.

  3. Mix the Dry Ingredients
