Ingredients:
Wet Ingredients:
1/2 ripe avocado, 75g
½ cup applesauce,120g
1/2 medium zucchini, cut into chunks, 120g
1 handful spinach, 25g
3/4 cup milk, 180g (I used soy milk)
1/3 cup nut or seed butter, 85g (I used peanut butter)
2 eggs or flax eggs (2 tbsp flax meal + 6 tbsp warm water)
4 servings of collagen powder (optional)
1 tsp vanilla extract
Dry ingredients:
3/4 cup rolled oats, 60g
1/2 cup almond flour, 48g
1/4 cup ground flax, 28g
1/3 cup maple syrup, 107g
2/3 cup cocoa powder, 55g
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup mini chocolate chips, 90g
NOTE: if you prefer protein powder instead of collagen, add ¼ cup of vanilla protein powder and decrease oats or almond flour by ¼ cup
Directions:
Preheat the oven to 350°, and line a 12 count regular muffin tin with silicone or paper liners
Blend the wet ingredients until smooth, then add your dry ingredients and blend until you have a smooth mixture.
Transfer the mixture to a bowl. Add and mix two tsp of almond flour or oat flour(if you have that on-hand) to the chocolate chips, this will prevent them from sinking to the bottom of the muffins. Fold the chocolate chips to the mixture.
Scoop the batter into the muffin liners, filling each ¾ of the way up. Add a few more chocolate chips on top if desired.
Bake for 23-25 minutes at 350°.
Allow the muffins to cool in the pan for at least 15 minutes, then gently remove and transfer to a cooling rack to cool completely.
Keep the leftovers in an airtight container in the refrigerator for up to one week, or freeze for longer storage.
