Ingredients:

¾ cup cottage cheese

2 eggs or 3 egg whites

2 tsp vanilla extract

1/2 cup coconut sugar (any granulated sweetener will work)

1 ¼ cup almond flour, toasted (toasting is optional, oat flour will also work)

1 tsp baking powder

½ tsp salt

½ cup chocolate chips (use whatever chocolate chips you like or omit)

Flakey sea salt, optional

Instructions: 

Preheat oven to 350 degrees F and line an 8×8 baking dish with parchment paper.

Toast your almond flour on a baking sheet with parchment for 5-6 min until lightly golden, then let it cool completely.

In a food processor or high-speed blender, combine eggs, cottage cheese, sugar, vanilla, salt and baking powder, blend until smooth.

Pour cottage cheese mixture into a medium sized bowl, add your almond flour and chocolate chips and stir until just combined.

Pour batter into the prepared baking dish, sprinkle a few more chocolate chips on top and bake for 20-25 minutes (or until a knife comes out cleanly from the center of the pan. Let the pan cool completely on a wire rack before slicing into 12 blondies.
