Healthy Apple Crumb Cake

Delicious, nutritious & guilt-free Healthy Apple Crumb Cake!

Ingredients:

Topping Ingredients:

    •  2 cups almond flour

    • 1/2 cup tapioca flour

    • 1/2 cup coconut sugar

    • 1/2 cup non-dairy milk, I used almond milk

    • 3 eggs

    • 1/4 cup oil, I used light olive oil

    • 1 tsp vanilla extract

    • 2 tsp cinnamon

    • Pinch of All Spice, optional

    • 1 tsp baking powder

    • 1/4 tsp salt

    • 1 large apple, chopped

      Crumb Topping

    • 1/2 cup almond flour

    • ¼ cup finely chopped toasted pecans (optional)

    • 3 tbsp coconut sugar

    • 2 tbsp soft coconut oil (not melted)- use refined for a neutral taste

    • 1 tbsp tapioca flour

    • ¼ tsp cinnamon

      Directions:

  1. ·  Preheat your oven to 350 F.  Line a 9″ baking pan with parchment paper, you can use a square or round pan

  2. In a large bowl, whisk together the eggs, coconut sugar, light olive oil, almond milk, and vanilla extract.

  3. In a separate bowl, mix together the almond flour, tapioca flour, baking powder, salt and cinnamon & all spice.

  4. Stir the dry ingredients into the wet ingredients and mix well. Fold in the chopped apples and stir until evenly incorporated. Pour the batter into the pan.

  5. For the crumble, combine all the ingredients together in a bowl and mix together with a fork or your fingers to create a crumb.

  6. Sprinkle it over the top of the cake.

  7. Bake the cake for 30-35 minutes, until firm to touch. Let cool 10 minutes.

  8. Serve with a little powdered sugar or a scoop vanilla ice cream!  

    STORING:

    Keep stored at room temp for up to 4 days, or refrigerate for up to 1 week.
