Chocolate Cottage Cheese Cookies are a low-calorie, rich, and fudgy treat! You can also substitute gluten-free baking flour or gluten-free oat flour if you prefer.

The cottage cheese and egg whites boost the protein content, which is often lacking in traditional cookies. If you need to substitute the egg whites, you can use half a whole egg—just remember that the ratio is two egg whites to one whole egg in recipes. Keep in mind, though, that this substitution will increase the calorie count.

These cookies are also low in sugar, thanks to the versatility in the amount required and the type of sugar used. You can use coconut sugar or monk fruit to keep meals and snacks lower on the glycemic index. If you prefer a sweeter taste, feel free to adjust the sugar content to your liking.

 What You Need

  • Low Fat Cottage Cheese, I used Lactose Free

  • Egg White - or half of a full egg

  • Vanilla Extract

  • Melted Butter or Coconut Oil - Slightly cooled

  • Gluten Free Rolled Oats

  • Cocoa Powder, unsweetened (good quality)

  • Raw Cane Sugar, Coconut Sugar or whatever sweetener you like

  • Baking Powder

  • Baking Soda

  • Salt

  • Mini Chocolate Chips or whatever chocolate chips you like

  • Flaky Sea salt - optional - to sprinkle on cookies when they are out of the oven

Chocolate Cottage Cheese Cookies

Chocolate Cottage Cheese Cookies are a low-calorie, rich, and fudgy treat! These delicious cookies are not only gluten-free and healthy but also packed with protein and fiber, offering a well-balanced nutritional profile.

Ingredients:

1 egg white

1/2 cup low fat cottage cheese

2 teaspoon vanilla extract

4 tablespoons butter, melted (or coconut oil) slightly cooled

1 cup Gluten Free Rolled Oats

1/3 cup unsweetened cocoa powder

1/4 -1/3 cup raw cane sugar or coconut sugar (any sweetener will work)

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup mini chocolate chips 

Directions

  1. Preheat the oven to 375 F. Prepare a baking sheet with parchment or slip mat paper.

  2. Melt your butter or coconut oil first, let it cool slightly.

  3. Using a food processor or blender, blend together the rolled oats, egg white, cottage cheese, coconut sugar, vanilla extract and salt. If you already have oat flour and your cottage cheese is blended, you can simply use a bowl.  If you’re using a blender, add your wet ingredients first.

  4. Then add the baking powder, baking soda, cocoa powder and melted butter or coconut oil. Blend until the ingredients are fully combined.

  5. Add the chocolate chips and fold them into the batter to disperse them.

  6. Drop 1-2 tablespoons of the batter onto the prepared baking sheet to form one cookie using a small ice cream scoop. Repeat until you have 12-15 cookies or all batter is used. Wet your hand with a little water and flatten the cookies slightly.

  7. Bake 10-12 minutes or until the center of the cookies are firm and set. Don’t overbake these cookies, start checking at the 8 min mark, if it is slightly firm in the centre, they are good. They will continue to bake on the baking sheet while cooling.

  8. Cool on baking sheet for 5 min, then they are ready to eat! Store cookies in the refrigerator up to 10 days or in the freezer up to 2 months.

     

    Notes

    • If you like sweeter cookies, you can add more sugar. These are not sweet cookies. I personally do not like super sweet cookies. You can use as little as two tbsp of sugar, up to you.
