Prep time: 10 min
Cook time: 40-45 min
Yield: 16 servings (1 serving is 1/4 cup)
Ingredients:
4 cups of nuts (500-550g) (almonds, pecans, cashews, hazelnuts, peanuts, walnut halves, etc)
1 egg white (or 2 tbsp liquid egg white OR 1 tablespoon of aquafaba)
1/2-1 tsp cayenne pepper (You can add as little or as much as you like)
1 tsp cinnamon (Ceylon is the best)
1 tsp ginger powder
1 tsp mustard powder
1 tsp salt
½ cup (100g) coconut sugar (or brown sugar, brown sugar substitute, maple sugar)
Note: If you only have roasted nuts, that will work also
Directions:
Preheat oven to 250 degree F (121 C), line a cookie sheet with parchment
In a small bowl mix together spices, salt and sugar. Set aside
Whisk egg white until it is frothy, about 30-45 sec (no clear egg white visible)
Then add nuts to egg white, toss. Add the spice & sugar mixture, mix to coat the nuts.
Spread evenly on a lined baking sheet and bake for 45-50 min. You will notice the nuts to be dry and set
You can make half the recipe here. I would still use the full egg white, no need to cut that in half. Do use half the sugar & half the spices.
How to Store Them:
