These delicious cookie bars have a soft peanut butter cookie base filled with mini marshmallows, chocolate, and graham crackers. AND they are easy to make!

INGREDIENTS
· 1/4 cup unsalted butter, room temperature
· 1/2 cup natural peanut butter
· 3/4 cup brown sugar
· 1 egg, room temperature
· 1 teaspoon vanilla extract
· 1 cup all purpose flour
· 3/4 cup graham cracker crumbs
· 1/2 teaspoon cinnamon (optional)
· 1/2 teaspoon baking soda
· 3/4 teaspoon salt
· 2/3 cup good quality chocolate chopped
· 2/3 cup mini marshmallows
Directions:
Preheat your oven to 350°F and line a square baking pan (either 9 x 9 or 8 x 8 will work) with parchment paper. Set it aside.
Using a stand mixer fitted with the paddle attachment or hand mixer, blend together the butter and peanut butter until they're smoothly combined. Be careful not to overmix.
Add the brown sugar and mix thoroughly. Scrape down the sides of the bowl, then add the egg and vanilla extract. Mix until everything is well combined.
Scrape down the bowl again and add the flour, graham cracker crumbs, baking soda, and salt. Mix until everything is evenly combined and there are no streaks of flour left.
Gently fold in the marshmallows and chocolate pieces until they're distributed throughout the batter. Transfer the batter into the prepared baking pan and press it down into an even layer.
