No-Bake Energy Bites
Looking for a quick, healthy snack that’s easy to make and perfect for on-the-go energy? These no-bake energy bites are loaded with wholesome ingredients like oats, peanut butter, Medjool dates, and more. Packed with protein, fiber, and healthy fats, they’re a guilt-free treat for any time of day.
Ingredients:
1 cup old-fashioned rolled oats (90g) I used sprouted oats
2/3 cup toasted shredded coconut (unsweetened, 50g)
1/2 cup creamy peanut butter (128g) Feel free to substitute with any nut or seed butter.
1/4 cup ground flaxseed (30g)
1/4 cup hemp seeds (28g)
1/3 cup semisweet chocolate chips (60g): Use your favorite chocolate chips
8 Medjool dates (140g-160g) Ensure they’re pitted.
1/2 tsp cinnamon
1/4 tsp salt
1 teaspoon vanilla extract
Instructions:
In a small skillet, add you shredded unsweetened coconut. Toast on low heat for 3-4 min, keep the coconut moving so it toasts evenly. You want a golden brown color. Set aside to cool.
Place the pitted dates in a medium bowl. Cover them with boiled water and let them soak for 10 minutes to soften.
Drain the softened dates and transfer them to a food processor. Add the peanut butter, vanilla extract, cinnamon, and salt. Blend for 1-2 minutes until the mixture is smooth and creamy.
Transfer the blended mixture to a large mixing bowl. Add the oats, toasted coconut, ground flaxseed, hemp seeds, and chocolate chips. Mix thoroughly with a wooden spoon or your hands until well combined.
Using a tablespoon, scoop out portions of the mixture and roll them into bite-sized balls. You should get about 20-25 energy bites (I got 25)
For the best texture, refrigerate the energy bites for at least 30 minutes. However, you can enjoy them immediately if you’re short on time.
Place the energy bites in a sealed container. They’ll keep in the refrigerator for up to 1 week or in the freezer for up to 3 months.
