No-Bake Energy Bites

Ingredients:

1 cup old-fashioned rolled oats (90g) I used sprouted oats

2/3 cup toasted shredded coconut (unsweetened, 50g)

1/2 cup creamy peanut butter (128g) Feel free to substitute with any nut or seed butter.

1/4 cup ground flaxseed (30g)

1/4 cup hemp seeds (28g)

1/3 cup semisweet chocolate chips (60g): Use your favorite chocolate chips

8 Medjool dates (140g-160g) Ensure they’re pitted.

1/2 tsp cinnamon

1/4 tsp salt

1 teaspoon vanilla extract

Instructions:

  1. In a small skillet, add you shredded unsweetened coconut. Toast on low heat for 3-4 min, keep the coconut moving so it toasts evenly. You want a golden brown color. Set aside to cool.

  2. Place the pitted dates in a medium bowl. Cover them with boiled water and let them soak for 10 minutes to soften.

  3. Drain the softened dates and transfer them to a food processor. Add the peanut butter, vanilla extract, cinnamon, and salt. Blend for 1-2 minutes until the mixture is smooth and creamy.

  4. Transfer the blended mixture to a large mixing bowl. Add the oats, toasted coconut, ground flaxseed, hemp seeds, and chocolate chips. Mix thoroughly with a wooden spoon or your hands until well combined.

  5. Using a tablespoon, scoop out portions of the mixture and roll them into bite-sized balls. You should get about 20-25 energy bites (I got 25)

  6. For the best texture, refrigerate the energy bites for at least 30 minutes. However, you can enjoy them immediately if you’re short on time.
