Ingredients:

Banana Cottage Cheese Pudding

¾ cup cottage cheese

¼ cup Greek yogurt

1 banana (half for pudding, the other half sliced for topping)

2 Dates, softened

½ tbsp chia seeds

½ serving collagen powder

½ tsp vanilla

1/8 tsp cinnamon

Pinch of salt

Pecan Coconut Crumble

1 tbsp unsweetened shredded coconut

2 tbsp raw pecans, roughly chopped

1 tsp salted butter

1/8 tsp ground cinnamon

1 tsp maple syrup

¼ tsp vanilla extract

Directions:

For Pudding:

  1. Add hot water to your dates and let then soak for 10 min. 

  2. Add everything to a blender or food processor, blend until well combined. If it’s too thick add a little water from the soaked dates. Transfer the pudding to 1 or 2 bowls. Refrigerate.

    Crumble:

  3. Preheat a small skillet over medium heat.

  4. Preheat skillet for 2 min, Add the chopped pecans to the skillet. Toast them lightly for 2-3 minutes, stirring frequently, until fragrant and golden. Be careful not to burn them. Now add butter, stir until melted. Add your coconut, stir then turn off the heat.

  5. Add your vanilla, cinnamon, and maple syrup. Mix until the pecans and coconut are evenly coated.

  6. Remove from heat and allow the crumble to cool slightly. It will crisp up as it cools.

  7. Sprinkle the crumble generously over the banana cottage cheese pudding.

  8. Keep refrigerated 3 days.

    Notes:

    • This crumble provides a delightful crunch and adds healthy fats and a touch of natural sweetness to your pudding.
