Indulge in the irresistible delight of our Healthy Turtles, where the perfect harmony of naturally sweet dates, crunchy pecans, and velvety chocolate creates a treat that's as nutritious as it is decadent.
Ingredients:
· 12 pitted dates
· 1/2 cup toasted pecans
· 1/2 cup chocolate chips
· 1 tsp coconut oil (optional)
Directions:
Prepare the Dates:
Begin by placing the pitted dates in a food processor. Blitz them for 30 seconds to 1 minute until they form a sticky, cohesive mixture. Dates are not only naturally sweet but also packed with fiber, vitamins, and minerals, making them an excellent base for our healthy turtles.
2. Incorporate the Pecans:
Add most of the toasted pecans to the food processor, leaving behind about 2 tablespoons for later use. Pulse the mixture for another 30 seconds. The pecans add a rich, buttery flavor and a satisfying crunch, along with healthy fats and protein to keep you energized.
3. Form the Balls:
Scoop out the mixture and form it into 10 small balls using your hands. Place these balls on a parchment-lined baking sheet. To ensure they hold their shape, pop them in the freezer for about 15 minutes. This step helps the mixture firm up, making them easier to coat in chocolate later on.
4. Chop the Reserved Pecans:
