Healthy Double Chocolate Banana Bread

This Healthy Double Chocolate Banana Bread proves you don’t need refined flour or processed sugar to enjoy a bakery-style slice of chocolatey goodness. It's nutrient-dense, easy to make, and absolutely delicious. Plus, it makes the kitchen smell amazing!

Ingredients:

1/4 cup almond flour, 24g (or oat flour)

1/4 cup ground flax, 26g (or more almond flour)

1/2 cup unsweetened cocoa powder, 48g

2 medium-size ripe bananas, 200g or 1 cup mashed

2 large eggs

1/4 cup runny peanut butter, 64g (any nut or seed butter)

6 tbsp maple syrup or honey, 120g

1 tsp vanilla extract, 4g

1 tsp baking powder, 4g

1/2 tsp baking soda, 2g

1/4 tsp salt, 1.5g

2 tsp espresso powder, 4g (optional)

1/4 cup semi-sweet chocolate chips, 40g

Instructions: 

1.    Preheat your oven to 350ºF (176ºC), and lightly grease and line a 9x5 or 8x4 bread pan, leaving a few inches of overhang for easy removal. Set aside.

2. Add the bananas to a bowl and mash them, next add your eggs, nut butter, maple syrup and vanilla. Mix until well incorporated. Add your almond flour, ground flax, baking powder, baking soda, instant espresso salt, cocoa and chocolate chips. Mix until incorporated.

3. Pour the batter into your prepared loaf pan, spreading it out evenly and sprinkling extra chocolate chips on top if you like.

4. Bake for 35-40 minutes, until a toothpick inserted into the center comes out clean. Allow the loaf to cool in the pan for about 5 minutes before removing. Store in an airtight container for up to 5 days, or freeze for up to 3 months.

Notes:

*Cooking time will increase if you are using 8x4 baking pan
