Ingredients:
3 cups ground oats (300g)
1 tbsp ground flax seed (optional)
2 tsp ground cinnamon
1/2 cup Greek yogurt (145g)
1/2 cup honey or maple syrup (170g)
1/2 cup applesauce (130g)
2 large eggs
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 cup grated apple (150g)
1 cup diced apple (120g)
For the crumble:
2 tbsp ground oats OR ground nuts
2 tbsp quick oats
1 tbsp coconut oil
1 tsp honey
1/4 tsp ground cinnamon
Directions:
Preheat oven to 425F. Prepare your muffin tin with SiLLibake Baking Cups or grease your muffin tin with a little coconut oil or olive oil, or use paper liners.
Preparation: In a large bowl, whisk wet ingredients eggs, honey, Greek yogurt and applesauce. Then add your ground oats, ground flax (if using), ground cinnamon, baking powder, baking soda and salt. Mix until combined and then gently fold in your apples.
Spoon the batter into the muffin cups, and sprinkle the crumble.
Bake at 425F (220C) degrees for 5 minutes, then lower the heat at 375F (190C) degrees and bake for another 15-20 minutes. Let it cool in the pan for 10 minutes, then transfer to the wire rack and let cool completely. Enjoy!
TO STORE: Store at room temperature for up to 3 days, I like to place paper towel on the bottom of my storage container to help with the moisture
TO FREEZE: Individually wrap and freeze muffins for up to two months. Defrost overnight in the fridge or at room temperature for a few hours before enjoying.
