The Magic of Greek Yogurt
Greek yogurt is the star of this recipe, bringing a creamy texture and a boost of protein to these muffins. It not only helps to keep the muffins moist but also adds a delightful tangy flavor that pairs perfectly with the sweetness of the chocolate chips. Using full-fat or low-fat Greek yogurt allows you to customize the richness of the muffins to your preference.
What bananas can do?
Bananas are high in moisture, which helps keep baked goods soft and moist, similar to the effect of fats like butter or oil.
Naturally Sweetened with Maple Syrup
Unlike traditional muffin recipes that rely heavily on refined sugar, this recipe uses maple syrup as a natural sweetener. Maple syrup not only adds a subtle sweetness but also infuses the muffins with a warm, rich flavor. Plus, it’s packed with antioxidants and essential minerals, making it a healthier choice.
Versatile and Nutritious Add-ins
This recipe offers plenty of flexibility with add-ins. You can swap the mashed banana for applesauce or your favorite nut or seed butter, depending on what you have on hand. Ground flax seeds not only add a nutty flavor but also contribute a good dose of fiber and omega-3 fatty acids, making these muffins even more nutritious.

¼ cup banana, mashed (or apple sauce, or nut or seed butter)
2 tbsp, butter melted (or coconut oil)
2 large eggs
1 teaspoon vanilla extract
2 cups oat flour (you can replace 1 cup of oat flour with almond flour)
2 tbsp ground flax seeds
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup semi-sweet chocolate chips (or blueberries, fresh or frozen)

Add your cinnamon, baking powder, baking soda, and salt to the wet ingredients and mix well.
Add the oat flour and ground flaxseeds until just combined. Be careful not to overmix.
Add ½ tbsp of oat flour to the chocolate chips, mix the flour with the chocolate, then fold them into the batter.

Divide the batter evenly among the 12 muffin cups. Feel free to add a few more chocolate chips on top.
Bake for 15-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean or with just a few crumbs.
