Greek Yogurt Chocolate Chip Muffins

Ingredients:

1 cup Greek yogurt (plain, full-fat or low-fat)

1/4 cup maple syrup (whatever sweetener you like)

¼ cup banana, mashed (or apple sauce, or nut or seed butter)

2 tbsp, butter melted (or coconut oil)

2 large eggs

1 teaspoon vanilla extract

2 cups oat flour (you can replace 1 cup of oat flour with almond flour)

2 tbsp ground flax seeds

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup semi-sweet chocolate chips (or blueberries, fresh or frozen)

Directions:

  1. Line a 12-cup muffin tin with silicone liners or paper liners or grease the cups.

  2. In a large bowl, whisk together the eggs, banana, Greek yogurt, maple syrup, melted butter or coconut oil, and vanilla extract until smooth.

  3. Add your cinnamon, baking powder, baking soda, and salt to the wet ingredients and mix well.

  4. Add the oat flour and ground flaxseeds until just combined. Be careful not to overmix.

  5. Add ½ tbsp of oat flour to the chocolate chips, mix the flour with the chocolate, then fold them into the batter.

  6. Let the batter rest for 10 min (if you can), preheat your oven to 350°F.

  7. Divide the batter evenly among the 12 muffin cups. Feel free to add a few more chocolate chips on top.

  8. Bake for 15-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean or with just a few crumbs.

  9. Let the muffins cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
