Frozen Strawberry Cheesecake Bites

Made with cottage cheese, fresh strawberries, and a graham cracker crunch, they're like mini bites of no-bake strawberry cheesecake—coated in a luscious chocolate shell. Oh, and they pack a little protein punch, too!

Ingredients:

3/4 cup cottage cheese, 170g

1/4 cup cream cheese, 55g softened for 30 min (or more cottage cheese) 

2 tbsp maple syrup, 30g (or honey) Feel free to use any liquid sweetener you like

1 ½ cup chopped strawberries, 225g (or whatever berries you love)

1 tsp vanilla extract, 5g

Dash of cinnamon, 0.25g

Pinch of sat, 0.5g

1/3 cup crushed graham crackers, 35-45g

Topping:

1 ¼ cup semi-sweet chocolate chips, 210g (whatever chocolate chips you like)

1 tbsp coconut oil, 14g

1/4 cup crushed graham crackers, 25g

Instructions: 

  1. Blend the cottage cheese and cream cheese until smooth

  2. Add the maple syrup, vanilla, cinnamon, salt and ½ cup only of chopped strawberries. Blend until smooth.

  3. Fold the rest of strawberries and 1/3 cup graham crackers.

  4. Using a medium sized ice-cream scoop, scoop dollops onto a small sheet pan or plate lined with parchment paper, should make approximately 11.

  5. Freeze for minimum of 3 hours

  6. Melt the chocolate with the coconut oil in the microwave or double boiler, let the chocolate cool down a little before dipping.  Using a fork, dip the bites in the chocolate. Make sure that the bites are fully covered in the chocolate, use your fork to lift the bites out of the chocolate and tap off any excess chocolate. Place onto your lined surface and sprinkle with additional graham crackers.

  7.  Store in the freezer for a minimum of 30 minutes. Let them defrost for about 10-15 minutes before eating
