Frozen Salted Caramel Cottage Cheese Bites

Ingredients:

3/4 cup (170g) cottage cheese

1/4 cup (60g) Greek yogurt

1/4 cup (64g) unsweetened peanut butter (or any nut/seed butter)

7-8 Medjool dates, softened (about 105-120g, or use ¼ cup / 60ml of liquid sweetener)

1 tsp (5ml) vanilla extract

1/4 tsp (0.5g) cinnamon

Pinch of salt Flaky sea salt to sprinkle on top

Coating:

¾ cup semi-sweet chocolate chips 128g (whatever chocolate chips you like)

1.5 tsp coconut oil 6g

Instructions: 

  1. Soak your pitted dates in boiling water for 10 min, then drain the liquid.

  2. Blend the cottage cheese and yogurt until smooth

  3. Add the drained dates, nut butter, vanilla, cinnamon and salt. Blend until smooth.

  4. Using a medium sized ice-cream scoop, scoop dollops onto a small sheet pan or plate lined with parchment paper

  5. Freeze for 1 1/2 - 2 hours

  6. Melt the chocolate with the coconut oil in the microwave or double boiler, let the chocolate cool down a little before dipping.  Using a fork, dip the bites in the chocolate. Make sure that the bites are fully covered in the chocolate, use your fork to lift the bites out of the chocolate and tap off any excess chocolate. Place onto your lined surface and sprinkle with flakey sea salt or crushed toasted nuts or toasted coconut.

  7.  Store in the freezer for a minimum of 30 minutes. Let them defrost for about 10-15 minutes before eating
