 Ingredients:      

2 Sweet Potatoes, medium size (I peeled mine)

½ Parmesan, grated (you can use between ½ cup to ¾ cup)

2 tbsp olive oil

Salt & Pepper (to your taste)

1 tsp dried thyme (optional or whatever seasoning you enjoy)

Directions:

  1. Preheat oven to 400F. Line a baking sheet 13x18 (or big enough to fit your sweet potatoes) with parchment paper

  2. Peel your sweet potatoes (optional) and cut into ¼ rounds and put them in a bowl. Add you olive oil and seasonings. Toss until all slices are coated with oil and seasonings.

  3. Sprinkle you Parmesan in an even layer on the parchment paper (you want eat slice of sweet potato to have parmesan beneath it, keep the slices close together on the pan.

  4. Put them in your oven and bake for 25-30 min until the sweet potatoes are tender and the cheese is very golden.

  5. Let in cool on the pan for 10 min, then invert the potatoes on a cutting board or clean surface and pull back the parchment paper.

  6. Store leftovers in the fridge 3-5 days. Avoid reheating in microwave(you will lose the crisp)
