Ingredients:
1 1/2 cups semi-sweet chocolate chips (270g)
2 tsp Coconut Oil (9g)
Espresso powder 2 tsp (optional) (4g)
1 to 1 1/2 cups Brown Rice Crisp Cereal (45g)
Caramel filling:
2/3 cup almond butter, 160g (any nut or seed butter)
1/3 cup Maple Syrup, Pure (105g)
2 Tbsp Coconut Oil (27g)
1 serving collagen powder, 10g (I use Organika)
1 tsp Pure Vanilla Extract (5g)
½ tsp salt (3g)
Dash of Cinnamon
Flakey sea salt (optional)
Instructions:
Fully line a 8x8 or 9x5 baking dish with parchment (I prefer using a 8x8, bars are easier to slice)
Melt chocolate with coconut oil and espresso power if using, then mix in brown rice crisps
Pour HALF the chocolate mixture into your lined baking pan or distribute in an 8 slot silicone candy bar mold
Place in the freezer while you make the caramel.
Grab a small to medium pot, add all your caramel ingredients. On a low flame, whisk your ingredients until everything is well incorporated. No need to bring mixture to a simmer or boil.
When chocolate is hard, pour caramel overtop and place back in the freezer for 15 min then spread the remaining chocolate mixture on top. If you are in a hurry, no need to freeze the caramel, gently add the chocolate mixture to the top and without disturbing the caramel too much, evenly spread the chocolate over the caramel.
Sprinkle with flakey sea salt and freeze minimum one hour.
Remove from the freezer and slice 16 slices.
Store in the fridge for up to a week or the freezer for 3 months.
