Ingredients:
Cinnamon Swirl Almond Flour Quick Bread
5 large eggs
5 tablespoons unsalted butter, melted (I made brown butter or coconut oil)
½ teaspoon kosher salt
1 ½ cups almond flour (toasted, optional)
¼ cup ground flaxseed
2 teaspoons baking soda
1 tsp vanilla extract
¼ cup coconut sugar (or any granulated or brown sweetener of choice)
2 tsp ground cinnamon
1 tablespoon flakey almonds for topping
Apple Chia Jam
2 large Honeycrisp apples or red delicious (finely chopped)
1 tsp cinnamon powder
1/2 tsp ginger powder
1/4 tsp ground nutmeg
1-2 tbsp maple syrup (I used 2 tbsp or sweetener of choice)
1 tsp lemon juice
2 tbsp chia seeds
3/4 cup water
Directions:
1. Preheat your oven to 350°F (175°C). Grease an 8-inch loaf pan (9 inch pan is too big) and, for easy removal, line it with parchment paper.
2. To add depth of flavor, spread the almond flour on a parchment-lined baking sheet and toast it at 350°F for 7-8 minutes until lightly golden, stirring occasionally. Cool completely.
3. For Cinnamon Swirl, mix the coconut sugar and cinnamon together. Set aside.
4. In a separate bowl, add the eggs, the cooled melted butter or coconut oil and vanilla. Mix until smooth, then salt, and baking soda. Whisk them in very well.
5. Add your almond flour, ground flax. Stir until combined.
6. Pour half the batter into the prepared loaf pan, smoothing the top. Sprinkle half the sugar cinnamon on top, then add remaining batter and remaining sugar cinnamon and lightly swirl the sugar cinnamon into the batter with a knife.
7. Bake for 30-40 minutes, until the bread is golden and a toothpick inserted in the center comes out clean.
8. Let the bread cool in the pan on a wire rack for 10 minutes. Carefully remove, cool for another 20 minutes, then slice and enjoy!
Storage: Store in an airtight container or resealable bag in the fridge for up to 5 days. It also freezes beautifully—wrap each slice in plastic wrap and place in a freezer bag. Toast or microwave before serving.
Apple Chia Jam:
1. In a saucepan combine chopped apples, cinnamon powder, ginger powder, nutmeg and maple syrup and lemon juice. Turn on the flame at medium-high and stir with a spatula until liquid is released, about 8-10 minutes
2. Add water, bring to boil and then add chia seeds and mix well. Cook covered at low-medium for 5-7 minutes or until the apples are soft. Open the lid and mash them in the saucepan with a food masher as much as possible. Cook again at low flame while stirring continuously until most of the liquid is almost absorbed but not completely dry.
3. You can leave it chunky or blend it in a blender/food processor as smooth as you like.
4. Let it cool down to room temperature.
5. Store it in a glass jar and serve or refrigerate.
Notes:
• While cooking these apples make sure to keep a constant watch so that they do not stick to the bottom of the pan and are burned.
• This recipe can be refrigerated for about 2-3 weeks in a glass jar.
• This recipe makes about 3/4 cup and the serving size is about 1 tbsp per person.
