Baking with Almond Flour:

Baking with almond flour offers numerous benefits, as it's not only great for texture but also packed with nutrients. However, it's important to note that almond flour isn't a direct substitute for all-purpose flour due to its unique consistency and fat/protein content. 

Almond Flour vs Almond Meal:

Distinguishing between almond flour and almond meal is crucial. Almond flour, made from finely ground blanched almonds, lends a lighter texture to baked goods. On the other hand, almond meal, crafted from less finely ground whole almonds, is ideal for heartier recipes or those where texture variation is acceptable.

Now, let's talk ingredients:

- Cane sugar: Creamed with butter, it creates a light, soft cookie. While coconut sugar can be used, expect a darker color.

- Unsalted butter: Provides a creamy richness; ensure it's softened for optimal results.

- Egg: Acts as a binding agent; Although I haven’t tried it, a flax egg could be a potential substitute.

- Almond extract: Enhances the nutty flavor profile.

- Almond flour: Renders a moist, dense texture, resulting in chewy cookies. Opt for blanched almond flour for the best results.

- Salt and baking powder: Essential for flavor and leavening.

Make them Lemon Almond Cookies:

Simply add the zest of one lemon to the sugar and rub the zest through the sugar until it looks like wet sand. Add two tbsp of lemon juice once you add your egg and extract.

Almond Cookies! These scrumptious treats are made with almond flour and almond extract, and topped with sliced almonds. They have a rich, buttery texture that practically melts in your mouth. Plus, they’re gluten-free and grain-free.

Ingredients:

·      ½ cup cane sugar

·      6 Tablespoons unsalted butter, softened

·      1 large egg

·      1 teaspoon almond extract

·      2 cups almond flour

·      ¼ teaspoon salt

·      1 teaspoon baking powder

·      Sliced or whole almonds, for topping

Directions

  1. Begin by preheating your oven to 350°F and lining a baking sheet with parchment paper.

2. Cream together the butter and sugar until fluffy, then add the egg and almond extract.

3. Using a spatula, mix in the almond flour, baking powder, and salt until combined.

4. Scoop the dough into 12 balls, top with almonds, and bake until lightly browned 10-12 min. After cooling on a wire rack, serve and enjoy!

Storing & Freezing:

Ensure the cookies cool completely before placing them in an airtight container. They can be kept at room temperature for 3-4 days or refrigerated for up to a week.
